Introduction to basic principles of human nutrition and metabolism. Chemical structures, physical characteristics, and metabolism of protein, carbohydrate, lipids, minerals, and vitamins. Relationship between diets and metabolic diseases. Effects of deficiency or excess on health. Prerequisites: general biology and chemistry; organic chemistry concurrent.

NUTRITN 130 & CHEM 112,122,102 Previous or concurrent enrollment in CHEM 250 or CHEM 261 is required.
Student enrolled in CHEM 250 without completing 112 can be enrolled in Nutrition 230 with instructor or advisor permission.
